CF-9. Pasta alla Puttanesca 煙花女義麵

Ingredient

spaghetti (1/4 lb), olive oil (some), basil (some), chopped garlic (8-10 cloves), anchovy fillets (2-3), cherry tomatoes(1 lb), capers (1 tbsp), olives (1/2 cup), crushed red pepper (some)

Seasoning

black pepper, sugar

Steps

  1. Prepare chopped garlic and cherry tomatoes.
  2. Cook spaghetti, following package directions. Soak cooked spaghetti in cold water to keep it from sticking.
  3. Preheat the skillet. Add olive oil, garlic, anchovies, capers, olives, crushed red pepper and cherry tomatoes. Simmer the sauce over medium heat for 10 minutes. Season with black pepper and sugar.
  4. Add some basil. And put spaghetti in and toss to coat it with sauce.
  5. Serve with cheese.

CF-8. Sliced Pork Neck with Spicy Garlic Sauce 燒豬頸肉

Ingredient

  • pork neck(1 lb)
  • fresh red pepper(some)
  • scallion(some)
  • garlic(some)
  • sweet grape tomatoes(some)

Seasoning

salt, sugar, soy sauce, vinegar, mirin

Steps

  1. Prepare some sweet grape tomatoes and scallions threads.
  2. Prepare the spicy garlic sauce: garlic(3 cloves), scallion(some), red pepper(some), sugar(1 tsp), soy sauce(2 tsp), vinegar(1 tsp), mirin(1 tsp), water(2 tsp).
  3. Preheat the skillet. Keep the fat side of pork neck down and fry it over medium heat.
  4. Until pork oil comes out, add garlic(3-4 cloves), scallion(some), red pepper(5-6), and sichuan peppercorn(1 tsp). Saute until fragrant, about 40 seconds.
  5. Add soy sauce(2 tbsp), mirin(1 cup), wine(1 cup), and sugar(1 tsp). Cover for 20 mins over high heat.
  6. Cut the cooked pork neck into slices. Serve with the spicy garlic sauce.

CF-7. Orange Pork Chop 橙汁豬排

Ingredient

  • pork chop
  • orange
  • garlic
  • ginger
  • scallion

Seasoning

salt, sugar, white pepper, oil

Steps

  1. Pound pork chops with tenderizer hammer until thin.
  2. Season the pork chops with minced ginger(some), minced shallot(1 head), minced garlic(1 head), and sugar(2 tsp), salt(2 tsp), white pepper(1 tsp) and oil(2 tsp). Rest for 20 mins.
  3. Prepare 100 ml orange juice, bottled or fresh. If fresh one, add 3 tsp of sugar.
  4. Remove all minced ingredients(ginger, garlic, shallot) from pork chops. And add some potato starch on both sides.
  5. Fry pork chops over medium heat. 3 mins each side until golden.
  6. Cook the orange juice(100 ml) over high heat until concentrated into 50 ml. Add some white pepper. Serve with the orange sauce.

CF-6. Homemade Chicken Sausage 自製雞肉腸

Ingredient

  • ground chicken(1 lb)
  • minced ginger(1 tbsp)
  • scallion(some)
  • garlic(1 tbsp or more)
  • egg white(1)

Seasoning

salt, sugar, white pepper, wine or beer, potato starch

Steps

  1.  Add egg white(1), salt(2 tsp), sugar(2 tsp), white pepper(1 tsp), wine or beer(4 tsp) into ground chicken. Stir well.
  2. Add minced ginger, minced garlic, and minced scallion. Stir in ONE direction for at least 15 mins. At the same time, add potato starch gradually. 1 tbsp at a time, 4 times totally.
  3. Wrap ground chicken very tightly in plastic wrap. For shaping, keep frozen for at least 2 hrs.
  4. Remove plastic wraps, cover sausages with some oil and then wrap them in Aluminium foils.
  5. Steam for 30 mins.
  6. Remove foils and cool them down before serving.

CF-5. Coke Chicken Wings 可樂雞翅

Ingredient

  • party chicken wings (1 lb)
  • coke (1 can)
  • ginger (some)
  • scallion (some)
  • garlic (1 head)
  • star anise (2)

Seasoning

oil, dark soy sauce

Steps

  1. Dry chicken wings with paper towels.
  2. Preheat and coat the skillet with olive oil. Add chicken wings.
  3. When chicken wings turn slightly golden, add minced garlic (1 tbsp), star anise (2), and white parts of scallion (some). Saute until fragrant, about 30 seconds.
  4. Add soy sauce (2 tbsp), salt (if needed) and saute until colored, about 10 seconds.
  5. Add garlic (10 cloves or more), ginger, and COKE. Cover the skillet for 15 mins. Enjoy with some minced scallions!

CF-4. Shrimp with Tofu and Eggs 蛋黃蝦仁燴豆腐

Ingredient

  • head-on shrimps(8 or more)
  • soft/extra soft tofu(1 box)
  • ginger(some)
  • scallion(some)
  • boiled eggs(2)

Seasoning

salt, white pepper, oil, sugar

Steps

  1. Dry shrimps with paper towels. Remove heads, peel and devein shrimps with food scissors.
  2. Keep the heads. Cut shrimps into small pieces with food scissors.
  3. Prepare 2 boiled eggs and chop them with a teaspoon.
  4. Preheat and coat the pot with olive oil. Add fresh sliced ginger(some), scallions(some) and shrimp heads. Saute until all heads and oil turn red.
  5. Add chopped eggs and saute for a while.
  6. Add soft tofu and cut it with your spatula freely. Add 4(or more) cups of water. After boiling, remove all heads, ginger and scallions.
  7. Season soup with salt and sugar. Add shrimps and fresh sliced scallions. Serve with some white pepper.

CF-3. Sichuan Pork with Peppers and Tofu 水煮肉片燴豆腐

Ingredient

  • pork center loin chop (1 lb or more)
  • soft/extra soft tofu (1 box)
  • minced garlic (some)
  • scallion (some)

Seasoning

salt, white pepper, oil, sugar, chilli toban djan, sweet potato flour, crushed red pepper, sesame

Steps

  1. Slice pork chops and pound them with tenderizer hammer until thin.
  2. Season pork with sugar(1/2 tsp), salt(1/2 tsp), white pepper(1 tsp), oil(1/2 tsp), water(1 tsp). Stir well and then add some sweet potato flour(1 tsp). Stir very well and add a little water if needed.
  3. Preheat and coat the pot with olive oil. Add fresh minced garlic(2 tbsp), chilli toban djan(2 tbsp). Saute until oil turns red.
  4. Add soft tofu and cut it with your spatula freely. Add 2 cups of water. After boiling, season with sugar and then add seasoned pork.
  5. After pork turns white, pour all into a bowl.
  6. Add some fresh minced garlic, minced scallion, crushed red pepper and sesame on top. Pour over them with very hot oil.

CF-2. Chicken and Corn Congee 玉米雞茸粥

Ingredient

  • rice (1 cup)
  • minced chicken breast (1/4 lb)
  • chopped onion (1/8 cup)
  • chopped carrot (1/2 cup)
  • fresh sweet corn (1 cup)
  • chopped ginger (1/2 tsp)
  • celery (some)

Seasoning

salt, white pepper, oil

Steps

  1. Simmer congee, using 1 cup of white rice and 7 cups of water.
  2. Season minced chicken with salt(1/2 tsp), white pepper(1 tsp), oil(1/2 tsp), water(1 tsp).
  3. Preheat and coat the pot with olive oil. Add finely chopped onions, ginger and carrots, add sweet corns, and saute until all soften.
  4. Add 2 cups of water. After boiling, mix with cooked congee.
  5. Add seasoned ground chicken and stir well. Season with salt.
  6. Add celeries and white pepper.

CF-1. Tomato Fish 番茄魚片

Ingredient

  • fish fillets (1 lb)
  • tomato (1 lb)
  • garlic (8 cloves)
  • celery (some)
  • scallion (some)

Seasoning

salt, white pepper, Sichuan peppercorn, oil, sugar, potato starch

Steps

  1. Seasoning fish fillets with salt(1/2 tsp), white pepper(1 tsp), oil(1/2 tsp), and water(2 tsp).
  2. Stir well and then add potato starch(2 tsp). Again, stir very well.
  3. In a skillet, heat oil(2 tbsp) and Sichuan peppercorn(1/2 tbsp) over low heat. Until aromatic, remove all peppercorns.
  4. Add minced garlic and turn to high heat. Add sliced tomatoes and saute, until tomatoes soften.
  5. Add water(2 cups). After boiling, season with salt and sugar.
  6. Add fish fillets. Until fillets turn white, add sliced scallions and celeries.
